Fleur de Sel, literally ‘flowers of salt’ in French, are naturally occurring sea salt crystals which are hand harvested from the surface of salt pans and dried under the sun for a year. Ours come from the salt marshes of Enfeh, in the north of Lebanon, where Fleur de Sel is locally known as ‘white gold’ as an inexhaustible natural resource which can be extracted without endangering the environment. Beloved by cooks, Fleur de Sel is rare, and highly sought after for its high magnesium and mineral content.
