Fatoush Salad
Ingredients
- 250g of tomatoes.
- 150g of cucumbers.
- 1/2 bunch of flat parsley (optional).
- 2 branches of fresh mint (optional).
- 5 leaves of roman salad.
- 1/2 bunch of purslane (bakleh) optional.
- 5 red radishes.
- 1 onion.
- 2 garlic cloves, peeled and crushed.
- 1 tablespoon of sumac « Terroirs du Liban ».
- Juice of 1 lemon.
- 6 to 8 tablespoons of olive oil.
- 1 pita bread.
- Salt and pepper.
Preparation
- Cut bread into cubes and grill in the oven. Place aside.
- Prepare the vegetables: dice tomatoes and cut cucumbers, salad, radishes and onion. Pluck off the leaves of parsley, mint and purslane.
- Place all ingredients in salad bowl; season with lemon juice, olive oil, garlic, sumac, salt and pepper.
- Mix at the latest stage right before serving while adding grilled bread to keep it fresh and crunchy.
