Ingredients

  • 250g of tomatoes.
  • 150g of cucumbers.
  • 1/2 bunch of flat parsley (optional).
  • 2 branches of fresh mint (optional).
  • 5 leaves of roman salad.
  • 1/2 bunch of purslane (bakleh) optional.
  • 5 red radishes.
  • 1 onion.
  • 2 garlic cloves, peeled and crushed.
  • 1 tablespoon of sumac « Terroirs du Liban ».
  • Juice of 1 lemon.
  • 6 to 8 tablespoons of olive oil.
  • 1 pita bread.
  • Salt and pepper.


Preparation

  • Cut bread into cubes and grill in the oven. Place aside.
  • Prepare the vegetables: dice tomatoes and cut cucumbers, salad, radishes and onion. Pluck off the leaves of parsley, mint and purslane.
  • Place all ingredients in salad bowl; season with lemon juice, olive oil, garlic, sumac, salt and pepper.
  • Mix at the latest stage right before serving while adding grilled bread to keep it fresh and crunchy.
