Semolina Cake with Orange Blossom and Pistachios

Ingredients:
- 100g fine wheat semolina
- 100g almond powder
- 4 eggs
- 3 oranges
- 150g sugar
- 75g honey
- 2 tbsp orange blossom water
- 15g butter
- 2 tbsp raw pistachios
Preparation:
- Grate the zest of one orange, then juice it to obtain 10 cl of juice.
- Separate the egg whites from the yolks. Whisk the egg yolks with 75 g of sugar. Add the orange juice, zest, almond powder, and semolina. Mix well and let rest for 20 mins.
- Preheat the oven to 180°C.
- Beat the egg whites until stiff peaks form. Gently fold them into the semolina mixture.
- Butter a cake pan and pour the mixture into it. Bake for 25 mins.
- Juice the remaining 2 oranges. Pour the juice into a saucepan, add the remaining sugar and honey, and bring to a boil. Simmer for 2 mins, then let it cool slightly. Add the orange blossom water.
- Allow the cake to cool for 20 mins. Turn it out onto a serving plate and soak it with the syrup in several stages. Place the cake in the refrigerator for at least 6h.
- Sprinkle with crushed pistachios before serving.
