Semolina Cake with Orange Blossom and Pistachios

For 4 people

 

 

Ingredients:

 

  • 100g fine wheat semolina 
  • 100g almond powder
  • 4 eggs 
  • 3 oranges 
  • 150g sugar 
  • 75g honey 
  • 2 tbsp orange blossom water 
  • 15g butter 
  • 2 tbsp raw pistachios 

     

    Preparation:

     

    1. Grate the zest of one orange, then juice it to obtain 10 cl of juice. 
    2. Separate the egg whites from the yolks. Whisk the egg yolks with 75 g of sugar. Add the orange juice, zest, almond powder, and semolina. Mix well and let rest for 20 mins.
    3. Preheat the oven to 180°C.
    4. Beat the egg whites until stiff peaks form. Gently fold them into the semolina mixture.
    5. Butter a cake pan and pour the mixture into it. Bake for 25 mins. 
    6. Juice the remaining 2 oranges. Pour the juice into a saucepan, add the remaining sugar and honey, and bring to a boil. Simmer for 2 mins, then let it cool slightly. Add the orange blossom water. 
    7. Allow the cake to cool for 20 mins. Turn it out onto a serving plate and soak it with the syrup in several stages. Place the cake in the refrigerator for at least 6h. 
    8. Sprinkle with crushed pistachios before serving.
