Chicken with Oak Honey and Lemongrass

For 4 to 6 people

 

 

Ingredients:

 

  • 1 free-range chicken 
  • 2 lemongrass stalks 
  • 3 garlic cloves 
  • 3 cm fresh ginger
  • Juice of one lemon
  • A pinch of cayenne pepper powder 
  • 3 tbsp oak honey
  • 3 tbsp soy sauce 

     

    Preparation:

     

    1. Cut the chicken into pieces. 
    2. Remove the tough ends of the lemongrass stalks. 
    3. Peel the ginger and garlic cloves.
    4. Place the lemongrass, garlic, ginger, and cayenne pepper in a blender and process until a paste forms. 
    5. In a mixing bowl, combine the honey, soy sauce, and lemon juice. Add the blended mixture and mix well. 
    6. Pour the marinade over the chicken pieces. Cover the dish with plastic wrap and refrigerate for 5h. 
    7. Preheat the oven to 180°C. 
    8. Place the chicken in the oven and cook for 10 mins, turning the pieces once and basting them with the marinade. 
    9. Serve with sautéed vegetables and a herb salad.
