Fruit Tart with Orange Blossom Water Cream

For 1 tart

 

 

Ingredients:

 

  • 1 tart shell
  • 2 tbsps orange blossom water
  • 125 g milk
  • 50 g single cream
  • 1 egg yolk
  • 25 g powdered sugar
  • 15 g cream powder
  • 1 sheet gelatin
  • 20 edible flower petals
  • 10 raspberries
  • 1 kiwi fruit
  • 100 g pineapple
  • 20 pomegranate seeds

     

    Utensils:

     

    • Mixer

     

    Preparation:

     

    1. Soak the gelatin sheet in a bowl of water and drain.
    2. Heat milk in a saucepan.
    3. Beat egg yolk, sugar and cream powder.
    4. Pour over milk and whisk until boiling.
    5. Add butter, gelatin and mix. Allow to cool. 
    6. Pour cream and orange blossom water into mixer bowl. Beat for 2 minutes, then increase speed and beat for 3 minutes.
    7. Add to first mixture.
    8. Cut kiwi and pineapple into small pieces.
    9. Spread the orange blossom cream over the tart base and place the fruit pieces and flower petals on top.

     

     It's ready !
