Galette des Rois with Orange Blossom Water

Ingredients:
- 2 puff pastries
- 1 tbsp orange blossom water
- 100 g almond powder
- 100 g sugar
- 2 eggs
- 100 g softened powder
- 1 egg yolk
Preparation:
- Preheat the oven to 180°C.
- In a mixing bowl, place the butter and sugar then mix using a whisk.
- Add the eggs and mix.
- Pour in the orange blossom water and almond powder and mix.
- Using a piping bag, fill a puff pastry with the orange blossom water and almond mixture.
- Using a spoon, brush the edges with the egg yolk.
- Cover with the second puff pastry and seal the edges with your fingers.
- Mark the edges of the dough with the blade of a knife.
- Brush the surface of the puff pastry with the remaining egg yolk.
- Decorate the surface with the blade of a knife and pierce the center to create a chimney.
- Leave to cool for 30 minutes.
- Bake for 30 minutes at 180°C.
