Fleur de sel is a delicate flaky salt collected from the surface of salt marshes. In late afternoon, in the summer, when the wind blows over seawater marshes, the fine Fleur de sel crystals are formed. They are harvested by hand using traditional tools. This traditional extraction conserves the environment and supports the local economy. Fleur de sel is typically sprinkled over savory and even sweet dishes, rather than cooked. It is particularly appreciated by gourmets because it adds an exquisite touch to meats, fish and other delicately cooked dishes.
Our Fleur de sel comes from the coastal village of Enfeh, in North Lebanon, where it’s locally known as ‘white gold’. The tradition of salt extraction has been passed down from generation to generation.
